When I made this, I couldn't remember a couple things about HOW to pan-fried it. Firstly, I put wayyyy too much oil and then when it comes to putting the water in, the "explosion" of the water & oil became just too much. You know, when you fry some tofu or some kind of watery food. It wasn't suppose to make that "explosion" at all. So the first trial was a disaster. The second trial, I just messed around again and again, and everything just didn't work until I suddenly remember how to do it right :P
Also... I went with the "semi-homemade" way which is just buying the dumpling skin instead of making them from scratch :) The dumpling skin that I bought was the white one and it is round-shaped. Yellow dumpling skins won't work because it wouldn't be for kuo-tieh... it would be more suitable for pangsit goreng :)
Anyway... here's the recipe in Indonesian.
Bahan Isi:200 gr ground pork
100 gr udang iris halus
100 gr sawi putih, iris halus
1 sdm bawang putih cincang
2 sdm chives (atau bisa juga daun ketumbar/cilantro if you like), iris halus
2 sdm kecap ikan
1 sdm sesame oil
1 sdt arak merah/angciu (i didn't have ang ciu on hand, so i used bai-ciu/arak putih instead)
1 sdt garam
1 sdt gula
½ sdt merica
½ sdt vetsin
½ sdt maggie blok (optional!!! this is just my preference :))
1 sdm tapioca starch
Mix everything together.
Cara Membuat:1. Taro adonan isi di tengah lembaran kulit. Not too much. Probably about 1/2 sdm.
2. Lipat kulit so it becomes ½ lingkaran. Kerut ujung2nya to kind of "glue it off". Like
this.
3. Siapkan wajan (non-stick!) dengan 2 sdm minyak (remember, not too much oil!)
4. Masukkan kuo-tie dalam minyak panas. Don't overcrowd! Tutup wajannya. On this process, we just want the bottom part of the kuo-tieh to be brownish.
5. When the bottom part is brown, siram dengan air (about 1/2 cup), tutup wajannya.
6. Just let it cooking until the water evaporates. Baru abis itu diangkat.
5. Your kuo tieh is ready! Taste best with sambal, of course! :)
Sambal:1. Your favorite saos sambal (We ate it with our homemade saos sambal from Indonesia, but sambal ABC will work too :))
2. Bawang putih halus, sesuai selera
3. Kecap asin (optional)
4. Minyak Wijen (optional)
Mix everything together and eat your kuo-tieh with that! :)
